It's without a doubt one of the best story-driven RPG out there, if not the best. And that's coming from someone who has played RPGs since the 80's. OP, I disliked the first Witcher, but the second one is really better, I loved it, and the controls have changed immensely. Thanks to the scale, The Witcher 3 is much better at letting you just be in the world and explore, although the pacing of the plot can suffer due to the freedom of exploration. Neither game has a ton to do other than talk, kill, and loot, but the minigames are a worthwhile distraction. You won't miss much if you start from Witcher 3. There's a few characters that have side quests that you'll be confused on, but it's not that big of a deal. All of the important plot from Witcher 2 is given to you at the beginning of Witcher 3. Witcher 3 is better looking, much longer, and a bit more casual friendly.
Are Witcher 1 and 2 necessary : You can skip The Witcher 1 and 2
The Witcher 1 and 2 aren't necessary in the slightest. This isn't to say they're not good games, but in order to start anew with its own canon separate from the books, CD Projekt Red gave Geralt amnesia at the beginning of the first game.

Is The Witcher 2 a hard game : From personal experience the Hard difficulty in Witcher 2 isn't that bad once you get the hang of the combat system. I felt it was easier than Witcher 1's Hard difficulty. You shouldn't have any problems playing Witcher 2 on Hard for your first playthrough.
The combat is tough when you're just starting out. You must get the Position skill in the swordsmanship tree ASAP. Otherwise attacks from behind will deal 200% damage which will kill you very quickly. Be sure to use Quen to minimize damage you take.

They are both very much games of their time. Witcher 1 struggles with clunky mechanics and rough gameplay and 2 is riddled with QuickTime events. You don't really need to have played the first two to get into the third one though.
Is The Witcher 2 harder than Dark Souls : I actually found The Witcher 2's combat a bit more difficult in some ways compared to Dark Souls, but I'm playing on the hardest difficulty. I can safely say I love both games and cannot wait for The Witcher 3 and Dark Souls 2. I love this game, but i think the hardest part of this game is the wierd enemy AI.
